I use two programs. One for recording and one for mastering. The top picture is of the console view in Cakewalk Sonar 5 Producer. This is the recording program. The 2nd picture is of Sony Sound Forge 8, which I use for mastering.
There are many different programs to
choose from that will get the job done. The things to look for when choosing a program are bit depth and sampling rate. Bit depth  should be capable of up to 24 bit and sampling rate, up to 96,000 hz. I record at 24 bit/48,000hz. This setting works well with my CPU. Remember...CD quality is only 16 bit/44,100hz. S/PDIF capability is a plus as well.
Whatever program you choose, make sure it is midi compliant.
Cakewalk is an incredible program that keeps surprising me with every project.
